Buckwheat noodles with sesame seeds

- 1/4 cup sesame seeds

- Optional: protein of choice (tofu, chicken, shrimp)

Instructions:

1. Prepare buckwheat noodles according to package instructions. Drain and rinse with cold water to stop the cooking process. Set aside.

2. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, ginger and garlic to make the dressing. Taste and adjust seasoning if necessary.

3. In a dry skillet over medium heat, toast the sesame seeds for 2 to 3 minutes until lightly golden and fragrant. Be careful not to burn them. Remove from heat and set aside.

4. In a large bowl, combine the cooked buckwheat noodles with the sesame-soy dressing. Toss well to coat the noodles evenly.

5. Add toasted sesame seeds, green onions, cilantro, grated carrots and sliced cucumber to a bowl. Stir everything together until well combined.

6. If you are using the protein of your choice, cook it separately according to your preference (grill, oven or frying pan). Add the protein to the noodles and stir gently.

7. Serve sesame buckwheat noodles chilled or at room temperature, garnished with additional sesame seeds, green onions and cilantro if desired.
